250 g potato chips
500 g skinless boneless chicken
Black pepper, to taste

2 tsp lemon juice

Method:
- Preheat the oven to 200°C and use the nonstick spray to grease the baking tray.
- Whisk together lemon juice, salt, pepper, and ranch dressing in a bowl. Mix in the chicken tenders and toss until evenly coated.
- Add potato chips in a bag (preferably Ziploc) and seal tightly. Crush the chips using a rolling pin.
- Open the bag and toss in the chicken tenders before shaking vigorously until the pieces are completely coated in crumbs.
- Remove from the bag and place the chicken pieces on the baking tray and let them bake for 20 minutes or until golden.
- Sprinkle chives on top and serve hot with ranch dressing.

To prepare the chicken:
2 thinly sliced green onions
2 tsp oil
4 skin-on bone-in chicken thighs

To prepare the marinade:
2 cloves minced garlic
3 tsp sriracha
2 tsp grated ginger
3 tsp honey
3 tsp lemon juice
9 tsp soy sauce (low-sodium)
½ cup sweet chilli sauce

- Preheat the oven to 220°C.
- In a bowl, mix together all the ingredients required for the marinade.
- Toss in the chicken thighs and coat well. Let it sit or 20 minutes.
- Heat oil in a skillet and add chicken thighs. Sear until they are charred, for 2 or 3 minutes on each side.
- Transfer them to the oven and continue to bake for 15 minutes or until chicken changes its color.
- Garnish with peanuts and green onions.

Method:
- Preheat oven to 200°C. Line a baking sheet with the metal rack.
- Toss chicken wings with vegetable oil. Season.
- Transfer the chicken wings to the metal rack and continue to bake for 45-50 minutes or until crispy and golden.
- To make the sauce: stir in pepper flakes, Parmesan, parsley, garlic, and melted butter.

Ingredients:
1 ½ cup Parmesan, freshly grated and divided
½ cup parsley, freshly chopped
2 cup peas
¼ cup heavy cream
1 cup chicken stock (low-sodium)
Kosher salt, to taste
½ cup Sauvignon Blanc (or any other dry white wine)
1 onion, finely chopped
3 cloves garlic, finely chopped
Black pepper, to taste
500 g skinless boneless quartered chicken breasts
5 tsp olive oil
1 cup cooked white rice
Method:
- Preheat the oven to 230°C.
- In a bowl, drizzle some olive oil and add chicken. Season with pepper and salt.
- Heat a skillet on medium-high flame and add the seasoned chicken. Cook until the chicken changes color or for about 5-6 minutes on each side. Remove in a plate and let it cool.
- Add 1 tbsp olive oil in a skillet and heat over medium flame. Stir in the onions and garlic and cook for about 3 minutes, or until softened. Add in the heavy cream, chicken stock, wine, pepper, and salt. Bring to a boil and simmer for another 5 minutes or until reduced. Add a cup of Parmesan, parsley, peas, rice, and chicken (along with the juices from the plate).

Carrots and Maple Chicken

Ingredients:
Kosher salt
4 skin-on bone-in chicken thighs
3 carrots, sliced into ¼” rounds
2 tsp lemon juice
6 tsp mustard (whole-grain)
¼ cup maple syrup
3 cloves minced garlic
¼ cup apple cider vinegar
6 tsp olive oil (preferably extra-virgin)
Black pepper, to taste
Method:
- Preheat the oven to 220°C. Season the chicken with pepper and salt.
- Heat 3 tsp olive oil in a skillet over medium-high flame. Toss in the seasoned chicken thighs and sear for about 2 minutes on each side. Remove and transfer to a plate while saving the pan drippings for later.
- Pour the apple cider vinegar in the skillet and use a wooden spoon to scrape the bits on the bottom. Add lemon juice, thyme, mustard, maple syrup, and garlic. Let it simmer for a couple of minutes before adding the chicken.
- In a bowl, add the remaining olive oil and toss the carrots. Season with pepper and salt. Nestle these carrots into the skillet and bake the chicken for 20 minutes or until carrots are tender and chicken is cooked.

A dozen chicken drumsticks
Black pepper, to taste
3 russet potatoes, cut into lengthwise wedges
1 tbsp parsley, finely chopped
½ cup Parmesan, freshly grated
6 tsp olive oil (preferably extra-virgin)
Kosher salt, to taste
3 tsp sugar
1 cup chicken stock (low-sodium)
½ cup balsamic vinegar
Method:
- Mix salt, sugar, chicken stock and balsamic vinegar in a saucepan and bring to a boil. Simmer on low flame for 20 minutes or until it is reduced by half.
- Preheat the oven to 220°C and place 2 racks.
- In another bowl, mix parsley, Parmesan and 3 tsp olive oil before tossing the potatoes. Place it in a pan and bake in the bottom rack for 25-30 minutes.
- Use paper towels to dry the drumsticks. Place the chicken on a rimmed sheet pan that’s lined with parchment paper. Sprinkle olive oil and season with pepper and salt on each side. Spread the chicken evenly and place the pan on the top rack. Continue to bake for 25-30 minutes. Change the oven setting to ‘broiler’ and broil for 5 minutes or until the chicken changes color.
- Remove from the oven and keep aside. Move pan with potatoes to the top rack and broil for 5 minutes or until golden and crispy.
- Plate the potatoes and chicken with sticky balsamic sauce and garnish with chopped parsley.

Lime-Honey Chicken

Ingredients:
4 skin-on bone-in chicken thighs
¼ tsp ginger
Salt, to taste
½ tsp turmeric
2 cloves minced garlic
3 tsp honey
6 tsp lime juice
9 tsp olive oil (extra-virgin and divided)
Black pepper, to taste
To serve:
2 cups cooked white rice
Method:
- To make the marinade: mix together ginger, turmeric, garlic, honey, lime juice, and 6 tsp olive oil. Toss in the chicken until completely coated.
- Cover the bowl with plastic wrap and place in the refrigerator for an hour or two.
- Preheat the oven to 220°C. Add olive oil in a skillet and place over medium-high flame. Season each side of marinated chicken with pepper and salt. Toss in the chicken in the pan. Make sure you place it skin-side down before pouring the marinade.

1 thinly sliced lemon
1 red onion, cut lengthwise into wedges
2 diced russet potatoes
6 skin-on bone-in chicken thighs
3 tsp lime juice
Black pepper, to taste
Kosher salt, to taste
6 tsp dried rosemary
6 tsp dried oregano
3 tsp honey
3 cloves minced garlic
½ cup olive oil (extra-virgin and divided)
Method:
- Preheat the oven to 200°C.
- In a bowl, mix pepper, salt, rosemary, oregano, honey, garlic, lemon juice, and ¼ cup olive oil together.
- Toss the chicken until well coated and let it marinate for 5-10 minutes.
- Toss lemon slices, red onion, olive oil, pepper, salt, and potatoes in a large sheet pan.

5 cloves minced garlic
1 stick or ½ cup softened unsalted butter
Black pepper, to taste
Kosher salt, to taste
1 ½ kg skin-on bone-in chicken thighs
Method:
- Preheat the oven to 220°C. Use paper towels to pat dry the chicken thighs before seasoning them with pepper and salt.
- In a bowl, mix thyme, lemon zest, garlic, and butter. Rub this mixture over and under the chicken thighs.
- In a rectangular baking dish place the lemon rounds, chicken thighs, and potatoes. Place it in the oven and continue to bake at 70°C for 35 minutes or until cooked through. Broil for a minute or two on high for a crispier version.
