Salt, to taste
1 tbsp coriander, chopped
3 tbsp cheese, grated
1 onion, chopped
1 tsp chilli powder
2 tbsp butter, softened
2 teacups puffed wheat

- Apply salt, chilli powder and butter to the puffed wheat and spread it in a baking tin.
- Bake in a moderate oven for 350 F for 15 minutes in the middle shelf until crisp.
- Add the cheese, onion and coriander. If desired, sprinkle a little salt and chilli powder.
- Serve immediately.
2. Capsicum and Paneer on Toast
One of the most attractive appetizer recipes that’s also easy to prepare.
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 6-8
Ingredients:
½ tsp chilli sauce
Salt, to taste
4 tbsp cheese, grated
2 tbsp ghee
2 tbsp butter, melted
1 loaf bread, sliced
¼ tsp chilli powder
225 g paneer
½ teacup tomato ketchup
1 onion
1 capsicum
Method:
- Finely chop the capsicum, onion and paneer.
- Stamp out rounds from bread slices with a 40-50 mm diameter cutter.
- For every alternate round, cut a hole in the centre with a 12-14 mm nozzle.
- Grease a baking tin. Begin by arranging all bread slices that do not have holes and then placing slices with holes over them.
- Brush the slices with melted butter and bake in a preheated oven at 400 F until crisp or for 10 minutes.
- Heat ghee in a vessel and fry the onions for a minute. Add capsicum and continue to fry for another minute or so.
- Remove from heat and add salt, chilli powder, chilli sauce, tomato ketchup and paneer.
- Spread a small amount of the filling on each uncut bread slice and put back the cut slice over it.
- Sprinkle cheese on top. Bake in a preheated oven at 400 F for 8-10 minutes.
- Serve immediately.
3. Paneer Potato and Corn Balls
A tasty fried cocktail snack.
Preparation time: 20 minutes
Cooking time: 40 minutes
Serves: 6-8
Ingredients:
Salt, to taste
Oil, to deep fry
Bread crumbs
1 teacup plain flour
4 tbsp cheese, grated
1 teacup boiled corn
2 tbsp coriander, chopped
4 green chillies, chopped
225 g paneer
4 potatoes, boiled
To serve:
Tomato ketchup or chilli sauce
For the sauce:
4 tbsp butter
2 tbsp plain flour
2 teacups milk
Method:
- To prepare the sauce, heat the butter in a vessel and fry the flour for 30 seconds. Add the milk and cook until a thick mixture is obtained.
- Chop the paneer and potatoes.
- Mix the prepared sauce, cheese, corn, coriander, green chillies, paneer and potatoes.
- Shape into balls.
- Mix the flour in 1 ½ teacup of water. Dip the balls in this paste, roll in bread crumbs and deep fry in oil.
- Serve hot with tomato ketchup or chilli sauce.
4. Cheese Straws
Pungent and spicy, this is one of the best appetizer recipes.
Preparation time: 15 minutes
Cooking time: 20 minutes
Serves: 30-40 straws
Ingredients:
2 pinches salt
3 pinches chilli powder
4 tbsp cheese, grated
35 g butter
115 g plain flour
Method:
- Sieve the flour and add the salt.
- Rub the butter into the flour using your fingertips till the mixture resembles bread crumbs.
- Add chilli powder and cheese and mix well.
- Add 1 tbsp ice-cold water and knead to make a soft dough.
- Roll out the dough on a lightly floured board to 6 mm thickness.
- Cut into long strips with a fluted cutter and give 2 twists.
- Arrange the straws on an ungreased baking dish and bake in a hot oven at 450 F for 10 to 12 minutes.
- Serve hot or cold.
5. Potato and Sago Rolls

Ingredients:
For the stuffing:
Salt, to taste
Juice of 1 lemon
1 tbsp coriander, chopped
1 tsp garam masala
3 green chillies, chopped
4 potatoes, boiled
For the covering:
2 tbsp sago
½ teacup plain flour for the paste
½ tsp salt
2 tbsp hot ghee
1 ½ teacup plain flour
For the rolls:
Sweet chutney (or any other dip of your choice)
Oil, to deep fry
Method:
For the stuffing:
- Finely cut the potatoes.
- Add salt, lemon juice, corinader, garam masala and green chillies.
For the covering:
- Soak the sago in 1 teacup of water for at least an hour. Drain the sago.
- Prepare the paste by adding 1 teacup of water to the flour and mixin well.
- Mix water, salt, ghee and flour and knead a stiff dough.
- Roll out small puris from the dough.
How to proceed:
- Put a little stuffing in the centre of each puri.
- Pull a quarter of one puri towards the centre and apply a little paste on it. Pull the opposite corner similarly and seal the two using the paste. Now dip the open edges in the paste and sprinkle sago on this portion.
- Repeat for the remaining puris.
- Deep fry in hot oil.
- Serve hot with sweet chutney.
6. Cheese Crackers
Your guests will love these bite-sized crackers.
Preparation time: 20 minutes
Cooking time: 15 minutes
Serves: 40-50 pieces
Ingredients:
A pinch of salt
1 tbsp milk
½ tsp caraway seeds
55 g cheese, grated
25 g butter
85 g plain flour
Method:
- Sieve flour.
- Rub in butter using your fingertips.
- Add salt, milk, cheese and caraway seeds. Knead a dough.
- Roll out this dough in about 6 mm thickness. Cut into small pieces using a fancy cutter.
- Arrange on a greased baking tin. Use a fork or a toothpick to prick all over.
- Bake in a preheated oven at 450 F for 6-8 minutes.

To prepare the cottage cheese balls:

½ tsp soda bi-carb

150 g paneer
To prepare the sauce:
Salt, to taste
2 tbsp tomato ketchup
1 tbsp vinegar
1 tbsp soya sauce
2 large tomatoes
1 tbsp brown sugar
Method:
For the cottage cheese balls:
- Mash the cottage cheese and knead well.
- Next, soak the slices in yoghurt for a little time.
- Mix the salt, flour, soda bi-carb, coriander, chillies, bread and paneer.
- Deep fry in ghee.
To prepare the sauce:
- Heat water in a vessel and bring to boil. Add tomatoes.
- Remove after 10-12 minutes and take out their skin. Chop and keep aside.
- Add salt, tomato ketchup, vinegar, soya sauce, and brown sugar.
How to serve:
Plate the cottage cheese balls with warm barbeque sauce.
Tip: You can also serve tinned mushrooms with this sauce.
